Since our beginning, we have devoted ourselves to Japanese cuisine in its full depth and authenticity – a culinary tradition that has been an integral part of everyday life and culture in Japan for centuries. We, Yuko and Shuichi Umino, have been living in Kiel for many years. As classically trained musicians, our lives have long been shaped by the pursuit of precision, harmony, and expression – values we also find deeply reflected in cooking. When we first began, there was no place in Kiel where Japanese cuisine was prepared and guided by Japanese hands and sensibility. From this realization, the decision was made in 2010 to create such a place ourselves. What began as Restaurant ann has grown into ICHI, now located on Falckstrasse. Here, a highly skilled team of Japanese chefs brings together experience, technique, and sensitivity to create a new culinary narrative. At our original location on Holtenauer Straße, we opened RAMEN ann in 2019 – the first ramen restaurant in Schleswig-Holstein. It remains an essential part of our work and our understanding of Japanese everyday cuisine. To this day, we are the only Japanese-owned and Japanese-led restaurant of this kind in the region. What guides us has never changed: respect for ingredients, care in craftsmanship, and the wish to present Japanese cuisine as we ourselves understand it.
